SHORT ON TIME
I’m always running short on time. If I can find a recipe that doesn’t take long to prepare, can be made beforehand and doesn’t require my constant attention, I will jump on it. That’s not to say that I never make anything that requires more effort and time, but now that I have a baby, it’s getting more difficult to do so.

…then this simple recipe is for you:
Here’s what you’ll need (for four servings as a side dish):
- one cup of dried cous cous
- one cup of water
- half an avocado
- ten date tomatoes
- crumbled feta (as much as you want)
- olive oil
- one small shallot
Prepare a cup of cous cous and a cup of water. Bring the water to a boil in a small pot. When the water starts boiling, turn off the heat and evenly pour the cous cous in the pot. Add a bit of rock salt and a spoonful of olive oil. Cover the pot and let it sit for five minutes. (These instructions are usually written on the box of cous cous).
Cut the avocado in cubes.
Dice the date tomatoes and shallots.
Transfer the cous cous from the pot to a bowl and break up big pieces so that it is all uniform.
Add the avocado, tomatoes, crumbled feta and shallots to the cous cous.
Sprinkle with some olive oil (and lemon juice if you want) and mix it up.
See? It’s so easy and fast. Best of all, it’s tasty and healthy.
